Ingredients
1½ C shredded zucchini
½ C unsweetened plant-based milk of your choice
6 Tbsp unsweetened applesauce
¼ cup nonfat Greek yogurt
1 tsp vanilla
1 TBSP maple syrup or monk fruit sweetener
2 eggs
2 TBSP butter
1 cup oat flour
1 cup Unleash’d Organic Pumpkin Seed Protein Powder
1 tsp cinnamon
½ tsp nutmeg
¾ tsp Baking Powder
½ tsp Baking Soda
Optional: ½ C chocolate chunks, or ½ C chopped nuts. Note: add “extras” once half the batter is in the loaf pan. Sprinkle in and put remaining batter on top.
